Have you ever wished you could experience that sense of contentment exhibited by a cat lazily sleeping on your favorite chair? This is the type of stew that makes you want to sit in front of a fire, put your feet up and bask in the fully satiated, content moment. The ingredients are nutrient dense and will make your heart, belly and mind happy and relaxed. Serves about 4 depending on portion size.



14 – 15 oz. gluten-free chicken bone broth

1 cup water

1 cup gluten-free rinsed lentils

1 T. coconut oil

1 large sweet potato peel and cut into bite-size cubes

1 packed cup of spinach

1/3 cup sweetened shredded coconut

3 slices crisp gluten-free bacon, diced

Salt to taste. If you like a bit of spice, you may wish to add turmeric, cumin or curry to taste.


  1. In a large saucepan, bring broth, water, and lentils to a boil. Cover and reduce heat. Simmer for 15 – 20 minutes or until lentils are tender.
  2. While the lentils do their thing, heat the coconut oil in a large pan on medium heat and brown the coconut. Stir occasionally to avoid burning. Add the diced potato and cook 2 minutes. Stir in the lentils and broth. Add the salt and spice of your choosing. Cover and cook 10 minutes.
  3. Stir in the spinach and continue cooking until the spinach wilts. If you’re a carnivore garnish with crispy diced bacon. If you are a friend of the animal kingdom, try vegan breadcrumbs, croutons or crumbled crackers to add a bit of crunch.
